50. It is almost time to eat the rich!!
The meat of the rich can be tough and a bit gamey. I would first start with the meat from the rump, thighs and calfs. If they play tennis or jog the meat can be tough, So take the meat and burry it in salt to draw out the blood. Next soak it in a milk bath for about a day. The acids in the milk break down the fiber of the meat to make it more tender. I am recommending using it in a stew. The vegetables infuse beautifully with the meat of a banker. Start with 1 large whole onion. Caramelize onion in the bottom of a large soup pot with a half a stick of butter. Add 4 Large sliced carrots and 3 stalks of sliced celery 4 large baking potatoes cut up in chunks. 4 cups of beef broth. Bring to a boil and fast simmer until Veggies are soft. Add another 4 cups of broth and a pound of the prepared banker cubed. Bring to a slow boil for about 40 minutes. If you like you can add a few cups of red wine at this time. (hopefully it is wine you stole from his reserves when you took him.) Season with salt and pepper to taste. Add 3 tbl. spoons of flour. stir thoroughly. Serve over rice. :toast: :toast:
