Reply #13: the only time I use those wafers is to make mini cheesecakes

You drop a nilla wafer in the bottom of a cupcake paper in a cupcake tin, and then drop in some cheesecake batter and bake til lightly browned. Then when cool, you cover with a bit of fresh fruit and a half spoon of orange marmalade as a glaze. Kiwi, strawberry, blueberries, whatever. Flavorful, handy to eat in two bites, and very colorful.
