2. I'm Doing Two Batches This Year

Finished #1 this afternoon and just turned on the water for carcass #2 a few minutes ago. I nearly wasn't able to get it to fit in the pot.

I start by sauteéing onion/celery/carrot, throw on some flat parsley, garlic, and peppercorns. Then just let it do its thing. After the stock is done and it's time to make it soup soup, I add tomato juice. Will have pics later.
