| Success with Phase One of the Thanksgiving meal! |

I made my cranberry-orange sauce, and it turned out perfectly! It's in the fridge chilling now, and I'm planning to take it out while the stuffed turkey breast is "resting." Then I made the maple-glazed yams with pecans, and it looks absolutely scrumptious! I put it in the fridge, and I'm going to rewarm it also while the turkey is "resting."
Phase Two of the meal:
In the morning, I'll get started on the stuffing mix for the turkey breast, spread it all over the turkey breast which had been butterflied by the butcher earlier, add some dried cranberries and pecans to the mix, and roll up the turkey breast tight by stringing it together. Put it in the oven, along with two heads of garlic for the mashed potatoes. The turkey and the garlic'll be in there for an hour, and meanwhile, I'll get started on the potatoes, and mash them, add the garlic/half-half/coarse black pepper/butter. After that, I'll whip up a quick mesclun salad with goat cheese, cranberries/pecans, and honey viniagrette!
The challenge is to see if I can get all of this done by noon!
