is a hot dog wrapped in mesquite-smoked bacon then cooked on a grill or on a griddle,
then topped with freshly chopped tomatoes, onions, shredded yellow or cotijo cheese,
tomatillo salsa or red chili sauce, pinto beans, mayonnaise, ketchup and/or mustard,
and served on bread and often with a fresh-roasted chili. It originated in Hermosillo,
the capital of Sonora.

Yes, you purists who can't see KETCHUP on a dog (I sometimes like it for variety),
the Sonoran hot dog pretty much MANDATES MAYO!!!

The fresh-roasted chili is a real plus, taking a big ol' bite out of it as you make progress
on the dog(s).

I think one of the main things was it being in what people thought was regualr ground beef.

Soak it in Melinda's Naga Jolokia hot sauce, and then add chilies, mustard, and onions on top.
