I just love it when people say Happy Holidays or Merry Christmas. Alas, I didn't get very many Happy Hannukah greetings, mainly because this area is sadly lacking in Jews.
I just love the joy and good wishes that usually accompany those greetings. My personal beliefs or practices are absolutely not at issue.
I'm working this evening, and I'm working all day tomorrow, 9am to 8pm. I volunteered to work tomorrow, and it's entirely up to me to be a happy face all day. Which is pretty easy for me.
It's our individual choice how we respond to people. Anyone who snarls at someone because the other person doesn't give the greeting wanted, or gives a wish of good cheer, is an asshole.

When I was young Happy Holidays was introduced as a way to be inclusive to Jews.
