I'm looking for some ideas on vegetable pickle brines. Shooting for something like Mezzetta's...

...brine they use for their vegetables. I recently purchased a jar of the Mezzetta's Sweet Cherry Peppers and while our boys thought they were disgusting, I and the Lady thought they were sublime. The ingredients were simple: peppers, water, distilled vinegar, sea salt and calcium chloride. If there are any picklers out there who are already thinking of summer, share your brines!

It is the canning and preserving bible. Anywhere that sells mason jars should have it. HopeHoops Mar 2012 #6
You simply must indulge in a copy of The Joy of Pickling. kestrel91316 Mar 2012 #5

The "small batch" trend is great. Pickle what's in season, a few jars at a time.

If you are looking for unusual pickles, I recommend the book "Quick Pickles" by Chris Schlesinger and John Willoughby. You could probably get it through your local library, if you don't want to buy it. It's pretty amazing.

Thanks for the tip. I think I'm going to try some quick pickles and see how well they turn out.
