Chicken, which I had marinated in chipotle sauce. And more of the spaghetti squash pancakes.
I'm cleaning out my refrigerator today, so no time to cook.

(2,016 posts)Lasagna, for me. Just spent 2 hrs in the kitchen, getting everything prepped/cooked/shredded/grated.
With ground beef mini-meatballs, and hot Italian sausage (no casing).
Water is on the boil, ready from the lasagna noodles. (I put spinach in the ricotta level.) Once cooked, assemble everything, put in the fridge, take a nap.
Bake at 350F for 50 mins after the nap.

(111,141 posts)and about as interesting as my diet got when I was cleaning out the cupboards last spring because I couldn't drive with a broken leg.
Anything chipotle sounds good to me. If you have leftover pancakes, try them with a mixture of chipotle in adobo and sour cream. The combination of hot stuff and the cool dairy really spikes up the flavor of things like squash pancakes.
ETA: I'll be eating my fourth meal from 2 chicken breasts with skin on and bone in. I've had 2 meals of chicken veggie rice soup and I cubed up the leftover chicken and put it into a cream sauce with chicken broth from the soup. I'll have it over rice. I might put a little sweet pepper into it along with peas and carrots tomorrow and call it chicken a la king. Will there be a sixth meal? Maybe...

Now I know, 'cuz I have a clean refrig.
I have spent 90" on it and am about 90% finished. Love a clean frig.
Galileo, that sounds like a very relaxing, enjoyable Sunday. Mmmmh!

(14,733 posts)The safest meat I can eat when the toe has been signalling that I've got to cut back on the purines. We'll be baking it in a honey-raspberry-mustard glaze.
I got that corner of the living room painted, so the new Christmas tree went up today. So far, so good, the newer beagle did not decide it must immediately be destroyed/eaten. In a day or two, we'll fluff out the branches. It's a much slimmer tree than we had in the past, which was wonderful both in terms of weight and in terms of how much we had to move furniture around to accommodate it. Prelit with white bulbs, small frosted pine cones here and there, sparkly stuff mixed in on the branches so it looks like it got hit with a bit of an ice storm. We picked it up a week or so back on our day trip to Holmes county (Amish area) at a year round Christmas store up there. I've always made the housemate wait until at least the day after Thanksgiving to start putting up Christmas stuff, but she's had a rough year, so I gave in on decorating at least inside early this year. (We also outsourced our Thanksgiving turkey cooking, we signed up for a turkey breast from a small local barbecue chain around here. We'll still cook everything else, but no futzing around with the turkey itself, other than heating it up again.) We're also planning on going out to catch the Peanuts movie in theatre some time soon, the first movie we'll have seen in theatre in probably more than 5 years.
Put a row of roughly two foot high sections of log up along the north side of the garlic/brussels sprout/cauliflower bed today, and I'll go out and pick up some clear plastic sheeting soon for a jury-rigged 'cold frame', since we're starting to get some frosts.

(14,733 posts)We have a chest freezer in addition to the one attached to the fridge, and we stock up like mad when the sales come along. Can't think of the last time I bought chicken breasts that weren't at least 33% or so off regular prices. We also just hit the holiday season baking sales, picked up 11 lbs of butter for 2.50 a lb, instead of the 4 or 5 bucks a pound it normally is these days. A lot of what we give as Christmas gifts is baked goods, jellies and jams we make from our own home grown fruit, and new this year, I'm trying my hand at extracts, and considering doing flavoured vinegars as well.

(2,673 posts)Pan fried chicken, mashed potatoes, butter beans cooked with ham hock and cabbage, apple and carrot coleslaw. Pumpkin pie fresh out of the oven and home made whipped cream. Fried chicken on Sunday always makes me think of Lyle Lovett's "Church" song. One of my favorites. Please note, no cream gravy or biscuits, gotta draw the line somewhere!
