What's for Dinner, Sunday, Nov. 1, 2015

I'm going to cook off and on all day, in between the usual weekend tasks before going back to the work week. My first project is Tomato Chewies, which is essentially tomatoes slow roasted until they almost turn into candy.



I used my E-Z Garlic Peeler to cut the garlic in an instant. This little device, which looks like this:



makes fast work of peeling garlic cloves.

I also tried a tip for chopping herbs, which is to cut and wash the herbs, strip them from their stems, and put them in a cup. Then chop them with a scissors. Again, this cut a considerable amount of time from that task. I knew about this tip and had the E-Z Garlic Peeler for some time, but just hadn't been doing/using them.

1. Swedish meatballs

I like 'em, but never made 'em.

Probably with egg noodles. I'm thinking that the sauce will have carrots, onions and mushrooms. (Why? Because I have a bunch of "elderly" mushrooms, which need to be cooked today, else comes the trash bin.)

Our older living beagle is 14 today, so we got a bunch of stew beef, and both beagles will get little pieces of beef without the teriyake sauce with dinner. She's spent much of the morning outside, enjoying the unseasonably warm weather while I cut more wood up into fire sized chunks.

4. I served my roasted tomatoes

with chicken breast, which had also been roasted at 250 in the convection gas oven. To keep the chicken breast from drying out, I put some broth made with Better Than Bouillion over the top. It had a nice browned, crispy outside.

I put pineapple salsa over the chicken breast, and then I put the roasted tomatoes both over and on the side. Was totally outrageous! What flavor!
