3. I love pecan sandies, mixed berries, watermelon and whipped cream parfaits.

Layer sandies, blackberries, raspberries, watermelon, whipped cream in staggered layers. Top with a final cookie, dollop of cream, dusting of cinnamon and fresh mint.

I use a small glass or shot glass to score out watermelon rounds to fit the parfait.

Step 1: Wash and prepare your favorite summertime fruit, be it berries, peaches, plums, or all of the above.

Step 2: Spoon over natural vanilla bean ice cream.

Step 3: Enjoy!
