What's for Dinner, Tues., July 21, 2015

I made a big salad again with all the fresh goodies I got from the Korean greengrocer. I'll have that when I arrive home around 9:30. In addition, I have the rest of the RG's meal from Sunday, which is a mixture of salmon, shrimp, mussels, clams, and peppers with yellow rice.

For dessert, I sweetened some ricotta with agave, cut up a ripe pear, and sprinkled mint over the top.

While at work, I'll have a little snack and then do a walking tour of the new campus, since I'll be teaching there this fall.

They've been working on our road for over a week now, and any time I pull out of the drive, there's an immediate sharp 3-4 inch drop, since the pavement is gone. This morning, after pulling out, the engine malfunction light came on, the 'vehicle stability control' light came on, and the '4WD' light came on, and all stayed on. So the car's in the shop til at least tomorrow, and with my tendons acting up again, walking to and from the grocery is out of the question.

Probably a tuna salad - I've got plenty of stuff on hand to pull that together.

Probably pappardelle style. Using up the last of the red sauce from the freezer, with meatballs and sausage. Tossed salad to boot.

Gonna make a sandwich and put a grilled pablano on it with some gardinieri and red onion. Maybe a nice salad on the side too. In a veggie mood tonight.

The corn is coming in slow this year, wet and cold spring. Ears are not really mature. A few weeks of heat and they should be right there.

Curiosity got the best of me, I had to try the egg replacement thing kentauros posted, so I'm baking muffins with raspberries from my yard using the fake eggs, and instead of regular oil, the grease from the bacon I made for the salad.
