I braise mine in the oven in stock, oranges, cilantro, onion and jalapenos. Some garlic, ancho chilis and cumin too. Then, after 3 hrs at 325F, I pull them out and onto a cookie sheet under the broiler to crisp them up.

Served on tortillas with guacamole. I'll make some Mexican rice while I'm at it. Maybe something else, too.

O, y cervezas.

the best part, pasta salad mixed in and chilled. It needs to sit overnight in the fridge, but it is delicious, filling and good for you.

But mostly it's just delicious

Triple the dressing recipe to coat the pasta.

The Chicken Saltimbocca was delicious and so was the beef stew. I've got a perfect avocado for salad, too.

I made roasted pears with carmel sauce last night and they were so good, I'm making them again tonight.

I am so glad to be back in my kitchen.
