I minced the lamb roast and added chopped broiled eggplant. Then I put in rosemary. I had earlier caramelized onions. I intend to put this mixture on low-carb tortilla soft wraps. All of this is caramelizing under a very low heat.

Cucumber salad with scallions and sour cream as a side dish.

Still thinking about what to do for dessert. It might just be a fruit salad with kiwis and blueberries, topped with a little yogurt and toasted almonds.

Loved it. But for some reason, I'm leery of putting together a dish from scratch at home. Go figure.

but leg of lamb or even a small roast is sooo tender and delicious. I follow the directions online; you just need a good meat thermometer. I like it medium rare, not too pink.

My pal has a coupon, enough for two meals, at that place-that-shall-not-be-named. Apparently they do a decent fried chicken and have plenty of choices for her vegan diet. I think it's a date for Thursday.

Cheeseburger and fries with cherry juice flavoured iced tea tonight.

Although I had to limit it to a single small burger for me, given the gout. But the new pans we were given at Christmas seem to bring in a lot more caramelization, so flavour boost for everything.

So sorry about your gout and hope you get it under control.

Speaking of caramelization, I have half an onion that just screaming to be caramelized, so that's going on the burgers!

G for both Gout and Gluttony.

In order to control the gout, I have to get my eating back to an honest to Gods healthy diet, sans fructose and low purines, which mainly means only small amounts of animal proteins a day. Losing the weight will lower my blood pressure, along with a lot of other health benefits it will provide my body.

I wish I'd thought to pick up some onions to caramelize for the burger, though. Of the 3 in the window sill pot I'm regrowing from the core and rootpad, , one just rotted, but the other two are doing quite well. One has about 3-4 inch stalks up, the other already has a half dozen 7-10 inch ones or so. I'm wondering if I could/should try to divide that one, but I think I'll just let it go since it's the first time I've tried regrowing onions from the unused parts.

Pots of dirt don't really do well on a boat, but I have done some hydroponic growing in the past.

Came across it on 'pinterest', most folks doing it simply chopped off the half inch or so of onion above the rootpad to start, but I saw another method in one post, and went with that, where you essentially take wedges out of each side so that you leave just the core above the rootpad, using all of the outer rings to cook with. That seemed to make more sense to me, since what you're left with much more resembles a seed onion without any leaves up yet. I've actually got the pot in an east-facing window where it only gets direct sun a few hours a day, but it seems to be doing pretty well.

They had similar posts on regrowing carrots, celery, even pineapple, but I think the pineapple takes a couple of years.

.....along with some lamb meatballs with yogurt sauce, hummus with pita chips, greek salad, and a cherry cheesecake. Oh, also a loaf of kalamata bread.

All this cooking because it's a family birthday today. And now the birthday boy is awaiting a tow truck on the other side of town for a clutch problem.

So I guess I'll be prepping tonight and baking tomorrow. Spanikopita is not very good the day after.
