What's for Dinner, Sat., Nov. 8, 2014

I think I'll do something interesting with the roasted vegetables and prosciutto from a previous meal. I have some roasted vegetable stock, too. Could be outrageous. The RG will be here, so I'll ask him for ideas.

barley/melon salad. It was good, but I made too much.

Then again maybe a pizza at the local joint.

It is unbearably hot here.

and my alfredo pasta with lemon and onions, along with a fluffy salad. Oh, and home made mustard balsamic Italian .

Ground beef with onions and serranos, topped with sharp cheddar, lettuce, tomatoes, sour cream and hot sauce. For the spices, I use garlic, cumin and ancho chili powders for the beef.

Let the goodness drip down the arm!

… but it sure worked.

Made a nice cooked red pepper thing via olive oil after I chopped it up slim, did same to half an onion and garlic and got rid of rest of flat leafed parsley. I added heat to it via the habanero sauce, red pepper flakes and a little salt. After that got nicely charred, I sliced up a small ball of mozzarella and sprinkled my end of the season basil (mint) from the garden) on it. Put all that on a nice harvest multi-grain bread. Through some cocktail olives on the platter. We made finger food out of it!

Drinking the wine after… waiting for Dr. Who's part two of season finale.

Real simple, but my cheeks are glowing.

...with an apple butter glaze. Along with twice baked potatoes and roasted sprouts.

Then an epic fail. I tried to make a pan of baked caramel corn during halftime of hot college football game. You pop the corn, you make the caramel, you pour the caramel over the popcorn on a sheet pan and then bake it for an hour.

Oops.

After half an hour, I peeked in the oven to see overcooked, almost burned goodies. The oven somehow got set to 375 instead of 250.

Dayum. It's going to be hell to get that off the pan. And even worse, I have a blister on my little finner from a blob of hot caramel.

But my football team won!

I just learned this "how to" from the RG. It's pretty clever.

Here's what you do with the pan:

Put it on your cooktop (hopefully you have a gas oven) with water in it. Heat to the temperature where it scorched on the pan. That, as you pointed out, would be 375. You don't have to measure it or anything, just watch it and scrape the pan with metal spatula.

It will come right off! I was amazed. It will take some time, but it's much easier than any other way I know of.

That pork roast sounds so delicious--and congratulations on your team winning!
