what's for dinner - friday, oct. 3?

as tasty as my potato soup is, i don't think i can do it for a fourth night in a row. husband caught my crud and i haven't pulled anything from the freezer, so we may very well wind up ordering in.

After three and a half years, have learned my boyfriend makes the most kick-ass breaded chicken tenders on the planet. Why hasn't he made these for me before? That's a topic for another post! But he made way too many to eat so now I have these awesome breaded chicken pieces. Coincidentally, I also have some spaghetti sauce that needs to be used up. I shall kill two birds with one stone and get some good Italian going tonight.

We didn't do cookies and milk, because we had neither, but we played and laughed and read a great story.

If i had the meal planning to myself, spaghetti squash would be very, very low on my list.

One time I roasted a spaghetti squash.

The next night I had 1/2 left over, so I took it out of its shell and put it in a nonstick pan. In the bottom of the pan was a little olive oil and butter. I chopped some fresh marjoram from the garden and sprinkled it throughout, tossing it around like real spaghetti.

Left it like this on low for a long time. It dried the "spaghetti" strands, yet at the same time, caramelized it. I sprinkled it with parmesan.

One of the most outrageously good things I ever made!

And a true original, too. Came up with that all by myself, she said proudly.

basket for about 6 months now, and it was still perfectly edible. Yay for food that stores for months simply in its own rind. Wasn't in the dark or even a particularly cool place.

Because I didn't get to make it last night. A horrible thing happened: my shoulder froze. It was so inflamed that I could not move it. I had to fix some frozen TJ stuff (perfectly delicious, but not homemade) because I couldn't move my left arm. Doc gave me some anti-inflammatory pills and I am much better today, although I still cannot lift my arm.

This is what an allergy to wheat can do to you. I have only myself to blame. I knew better, but I pushed the envelope, as they say.

Did that ever teach me a lesson. I was awake most of the night icing down my shoulder. I haven't had a night like that since I made jalapeno poppers!

The pork chops are made thusly:

Four boneless pork chops (you could do the bone-in ones also, just make sure they're fairly thick cut) in the bottom of the crock pot. Pour a can of cream of chicken soup over, then sprinkle a package of dried ranch dressing. On low for six hours, or on high for four.

They are incredible!

home made bread pudding with vanilla sauce. Recipe was something posted on a FB page. I've never made bread pudding before and this came out quite well.

The recipe I like uses French bread. And I always have to have whipped cream (I like it on everything!)

calls French bread, but it's really closer to an Italian loaf. No matter. I sliced it, let it sit out to stale up, which here (Santa Fe, NM) only took a couple of hours. It was quite easy and of course delicious.

I've almost never made any kind of pudding. I'd still like to find a good rice pudding recipe.

I used the hearts, liver & cleaned gizzards of 15 dove, and the boned breasts of two birds, together with a few ozs. of venison sausaged, and sauteed in three strips of bacon in a iron chicken frier. To this I added chopped celery, onions and bell pepper, adding chicken broth as needed to prevent sticking. While all this was going on, I cooked up 3 cups of long grain. Finally, I added the cooked rice to the vegs. & dove meat in the cast iron, stirring & mixing in cajun seasoning.

Took about 20 or so minutes. Next time I'll use bay leaves, along with the salt, pepper, garlic, camino and Cajun seasoning I did use. Perhaps some shrimp broth, and converted rice.

A great use for the tiny giblets collected from field hunting, and good eating on a cool night!

Dove hunting is the most popular form of hunting in the U.S., though some states don't allow it.

The bird is easy to clean en masse. In fact, the only thing tedious is splitting and cleaning the tiny gizzard!

This time of year in the South and other regions, dove-oriented meals become more frequent, esp. BBQ dove breast enclosing a jalapeno and jack cheese, all wrapped up in a bacon strip and pinned together with a toothpick.

Dove taken in the wild cannot legally be sold.
