Is it too early to kick around Superbowl snack ideas?

Last edited Sun Jan 29, 2012, 09:53 PM - Edit history (1)

I'm jonesing for Crab Boursin which I first sampled at Fulton's Crab House at Downtown Disney in LBV, Florida.
I'm in Chicago and my bride pointed out the forecast for LBV is for highs in the low-80's all week...this began the jones.
This recipe is great as it can be done up several days in advance.

3- 8oz. packages cream cheese
1/2 cup roasted garlic
1 TB chopped green onions
1/4 cup fresh basil
1/4 cup lemon juice
1 TB Prepared Horseradish
2 TB crab base or crab meat
1/4 cup roasted red peppers
1 TB hickory-smoked mustard (Note: If you cannot find smoked mustard, check your local supermarket for a bottle of liquid smoke. Use approximately 1/2 teaspoon.)

METHOD OF PREPARATION

1. Mix all ingredients except cream cheese in a large mixing bowl.

2. Cut cream cheese into small cubes and place them in the mixer.

3. Mix cheese until smooth. Stop, scrape sides and mix again.

4. When cream cheese is smooth, add the rest of the ingredients to mixer. Be careful not to over mix.

Store in covered container and refrigerate up to 7 days.

I've developed some sort of sensitivity over the last few years, so I avoid it, but that recipe looks really good!

be pretty good with smoked whitefish (if you can eat regular fish). Or even some cooked salmon.

Boursin is a trademarked name for a particular soft cheese. Maybe they think it tastes like a Boursin spread? Technically, they oughta call it "a la Boursin" -- trademark yada yada.

healthy recipes as well? It seem so so strange to me that I even have to ask this year as I am a wings/dips/gooey melted cheese with fritos Super Bowl food kind of person, but I am having to take drastic measures this year. WAH! If I know the spouse, he will say let's just let go this one time. *sigh* But I'd like to come up with things that won't seem like they are missing the fat and salt we have come to know and love.

Maybe mini tacos made with fish and no cheese?

fresh tomato salsa last summer (except with not quite that many serrano chiles- add to your own taste). It was really good- make early in the day so the flavors will meld. Better with garden tomatoes, but it would be good with store tomatoes, too (maybe the "on the vine" tomatoes- they seem to be better than the regular ones). Recipe here: http://allrecipes.com/recipe/fresh-tomato-salsa/
Serve with store bought (or home-made) baked tortilla chips and cut-up fresh vegetables.
You can bake some skinless chicken breast tenders, too. Dip them in egg whites, add seasonings of your choice to panko, dredge them lightly in the panko, and bake. Serve with honey mustard for a dip.

Costco has an easy heat and eat package in the fridge section by the fresh pastas.

Or Spoon fork Bacon has a great looking recipe

Hummus and tzatziki made with non fat Greek yogurt are also great dips with veggies or pita bread.
