1. I haven't

tried this but it sounds good and easy which is what I need! My niece made it though for her family and she said they loved it so think I'm going to try it tonight!

*she said her chicken was frozen but I don't think that's a good idea so might need to adjust time if using thawed chicken*

Crock Pot Hawaiian BBQ Chicken

Ingredients:
4-6 Boneless Chicken Breasts
1 Bottle Archer Farms Hawaiian Style Barbecue Sauce (from Target)
1 20 oz. can Pineapple Chunks, drained (she used crushed pineapple)

Directions:
Spray the inside of your crock pot with cooking spray for an easy cleanup! Place chicken breasts in the crock pot and cover with sauce. Empty can of drained pineapple chunks on top. Cook on High for 2-3 hours or Low for 4-6 hours. Shred chicken with two forks while still in the crock pot so the chicken will be well coated with sauce. Serve over rice.

*Sometimes I also throw in a chopped up green pepper and chopped onion . . . it tastes good with or without it.

2. Probably Chicken Marsala

We've been eating leftovers all week. Time for something new.

7. That sounds like a plan.

Husband is stopping at Costco...I'll have him get mushrooms. Thanks for reminding me...It use to be in our regular meal rotation but I stopped making it. I use only the Dry Marsala in mine...Hate when you go to a restaurant and it turns out to be too sweet.

13. Do Both....

I do!

He came home with two organic whole fryers and I didn't have the motivation to section them up....So I threw them into the big Le creuset that I only have excuses like this to use and put them in the oven.

I'm seasoning them with lemon, a whole bulb of garlic, thyme, bay and lots of black pepper and salt of course. The house will smell great in a little while

The dog got the hearts, gizzards and livers. She's very happy!

Tomorrow the carcasses will go in the pressure cooker for soup. I'll use the rest for chicken salad and freeze some for pot pie.

3. whatever it is, it will be terrific

I was awakened to a surprise last night. A warm hand in my bed. I turned over and felt this hand!

I traced the hand and there was a person attached to it: my resident food genie-eye, as I call him, AKA known as a husband. He had returned from the Fancy Food Show! I was supposed to pick him up at the airport but I got the date mixed up, thus I was surprised!

So the good news is he is cooking all weekend, making up pasta samples for some event in Philly this coming week. There's always plenty extra and his dishes are always something new and creative he's dreamed up. Yum! So looking forward to this.

5. OMG, Cher, you crack me up!

First, you don't even know where he went, then you are surprised to find him not just home, but in bed with you.

Anyway, I hope he brought you back some great ideas from the the Fancy Food Show and I hope you will share them with us!

Both were super excellent and I look forward to eating them again.

Hope you are doing well, Lucinda.

It is snowing and 10 F. out there. Husband is working 12 hour day at H&R Block, so I will eat my comfort food alone

11. Butternut squash soup and grilled cheese.

Cold and icy here, so it seemed the right decision.
