1. Holy crap, I just finished eating dinner and your asking me what I'm having for dinner?

Kidding. It's like my wife's grandma. You just dug your fork into the breakfast eggs and she asking what you want for lunch.

I'm thinking it will be Italian across from where I work. Doing another midnight at work tomorrow/today.

2. Cheater Chicken Fettuchini Alfredo

Wherein I use Trader Joe's canned chicken and a jar of Bertoli Alfredo sauce added to fresh broccoli and mushrooms over whole wheat noodles.

4. After pot roast last night, it's fish (don't know what kind yet) tonight...

I always feel we need to lighten up after eating red meat. I'm going to roast some butternut squash and probably have some spinach as a side.

9. Fish sandwich.

Tilapia, gently sauteed in olive oil on a whole wheat ciabatta roll dressed with horseradish mayo, and a chiffonade of romaine leaves tossed with paper thin sliced red onion. Pretty good!

10. Made mussels for the first time

In a white wine sauce with garlic, shallots and fennel. And frites on the side and French bread and Brie all warm and melted. Was yummy.

I was scared to try cooking mussels, afraid they'd die and go bad on me, but everything went fine and my DH said it was a delicious meal. Woo hoo! Guess this wont be the last time I cook mussels.
