Cabbage & Northern bean burritos

Ingredients
6-8 cups cabbage, chopped
1 medium onion, chopped
1 can Northern beans, drained and rinsed
2 T cumin
1 t garlic powder
2 T chili powder
2 cups shredded Cheddar cheese
Salsa
Sour cream (optional)

Directions
Saute onion it a frying pan in a little olive oil until translucent. Then add cabbage and saute until it's soft. Add beans and heat through. Then mash the beans, add spices and heat again. If the mixture becomes too thick, you can add either a little water or chicken stock/broth. Fill a burritos with the mixture, add cheese, roll up and bake on a cookie sheet at 375 for 20 to 25 minutes, until golden brown and crispy. A little trick I use is to roll up some aluminum foil and place it under the pan (on the rack) so the open end of the burritos is slightly raised. That prevents the cheese and filling from pouring out. Top with sour cream and salsa and enjoy.

1. What a different twist!

I normally make refried beans with pinto beans, but I've never considered cabbage with norther beans. I like them both separately...

Since cabbage is supposed to be "anti-inflammatory" as a vegetable, could it mean less gas producing results (no way to say that delicately, bif)...

2. They were pretty tasty

I'm thinking of trying Polish burritos. Cabbage, sauerkraut, and Gouda cheese. What do you think?

There really isn't a Polish cheese. So I thought something somewhat sour might go well with it. Just a hunch. It might be good o,r as my kids would say, it might suck!
