2. Hi, Lucinda!

Tonight we will have Wild Salmon showered with dill, mashed potatoes, and stir fried sweet & sour Swiss Chard. I think I will skin the pork shoulder I'm going to make taco filling from tomorrow and set the fat to rendering tonight. If I get enough, I'll make flour tortillas fresh for Christmas Eve. Although I love tamales for Christmas, I can't be on my feet all day to make them and be able to smile on Christmas morning. I'm going to add ciabatta rolls to my menu. Have a happy, safe holiday. Wishing you healing and peace in the New Year!

4. Had pollo con crema at this local Mexican restaurant.

Holy moley, that's good. But so rich!

10. Well, the bacon isn't all that healthy.

But, rarely eat it, and it's nice to splurge every so often.

Happy holidays, to you, too!

13. I needed to go to the store but I was out of ambition

so I had a boxed gluten free mac & cheese.

Don't look at me like that. I know you've all eaten Kraft dinner right out of the pot, standing over the sink. At least mine was on a plate.

They can't all be winners.

15. Chicken bowtie soup.

DH had some leftover lentil soup. I have a bleeping cold just in time for Christmas cooking.

We cleaned the smelts this afternoon and the squid is ready to go. Shrimp needs to be cleaned in the AM and parsley and garlic needs to be prepped. Lots to do tomorrow.
