Ingredients
3-4 cups cooked rice
1/2 onion
Garlic powder
A dozen or so green olives sliced
1 cup tomato sauce
1/4 cup salsa
Directions
Saute onion in a medium sauce pan until translucent, about 5 minutes. Add rice and heat through. Then add remaining ingredients and heat thoroughly.
I cook rice with stock and a couple of TBS of paprika. I then toss it with sauteed green pepper, onion, and a little garlic. If I want it hot, I'll use mild red chile instead of paprika.
I really like it better when the red color comes from peppers, not tomatoes.
