1. pumpkin chickpea soup

fresh bread if i can get myself around to it

this is my base recipe, but i'm using sweet potato and coconut milk and adding carrot. i'll add some cayenne because there is so much sweet in it.

hope you're feeling well.

2. Diced turkey, mushroom, spinach and cornbread stuffing quiche. The end of the left overs...

There'll be enough for a hot meal and a cold snack or breakfast tomorrow.

Made with my leftover duck carcass, onion, celery, carrot, garlic, and we'll just have to see if I find anything else to toss in the pot. Have a good day, Lucinda!

On edit: Added two med. russet potatoes in 1/2" dice and a good shot of sriracha. Also baked a small cast iron skillet of savory cornbread. All very satisfying.

8. Lamb chop, baked potato and salad.

Saving the rest of my moo shoo beef for a couple of lunches.

9. Turkey curry--my nod to the U.K. I also made turkey broth from the carcass.

Tomorrow is fish.
