served atop
some chilled pasta (I used gemelli)
served atop
some beautiful farm fresh spinach.
YUM!!! Everything is chilled so it is super easy to assemble, especially with leftover chicken.
Oh, and grate some parm on there too...

(22,138 posts)Busy day....we are on the election board at our polling place, so I am baking cookies for tomorrow and making a couple of salads to take for our election worker potluck dinner. There is no place to go close enough to get takeout, so we all bring something.

(22,138 posts)I enjoy it, it's a good way to see our "neighbors". I even learned to play the dulcimer on one primary election day when we weren't busy . I started working at the polls in Nov. 2007, several months after we moved here. My husband joined us in May 2008 and then was arm-twisted into being the Judge by the previous guy who was ready to call it quits after 27 years!
Hope all is well with you. I think about you on the water in SoCal, especially days like today when it is 37 F!!

(146,218 posts)I vote in a little tiny place tomorrow (population about 200). It's always a great treat and everyone wears their "I voted" stickers. They update a chart all day showing how many people have voted, sorted by party registration. I will spend some time in town asking people if they have voted and encouraging them to do so. But mostly I think I will be here, trying to keep the troll population under control with MIRT.

(4,073 posts)I was inspired this morning by chicken thighs on sale and bought a package of drumsticks as well.
So chicken, carrots, yellow squash, bella mushrooms, red potato,,,, when I heat it back up at dinnertime I plan on adding some kale
We'll do the leftovers for dinner tomorrow night. I'm not sure it will freeze.

(106,886 posts)Was hot here today so it was all cold food mid-day (tuna salad and stuff), wanted something quick and hot for a later meal. Fit the bill.
