baked (well really, nuked) sweet potato with sage butter, Quorn cutlets w/pesto and green salad.

It's clean out the fridge/pantry night!

Here's the recipe . Should serve 8.

4 green onions
1 cup sour cream
1 cup mayonnaise
2 T. chopped fresh dill (I've used dried before)
2 T. white vinegar
1 tsp. sugar
salt and pepper to taste
1 lb. pkg. cole slaw *
1 lb. pkg. shredded cabbage *

Mix everything together in a large bowl except for the cole slaw and cabbage. Then add the cole slaw and cabbage and stir until well mixed. Cover and chill for eight hours.

* or shred your own cabbage and carrots or whatever else you want to add

I use low fat sour cream and low fat mayo.

dipped in buttermilk and egg, then rolled in cornmeal and pan fried. Green salad, iced tea, and for dessert! Homemade ice cream, chocolate with chopped strawberries!

YUM YUM!!

corn on the cob(for all), raw cuke/carrots(for the Madster), slaw and sliced maters(for me). And a fruit salad for desert which means whipped cream for the Madster.

I usually make this on the weekend for breakfasts during the week. I don't feel like cooking anything else so this will be supper, too. I found some great blackberries to put in as the fruit.

It was hot as hell and muggy all day, but it has cooled off enough for a fire and they're just plain fun. We've got all kinds of wood from trimming trees so we're set and all three girls are actually home at once!!! Even my eldest's boyfriend is here. Then there's a strawberry yogurt pie in the fridge (middle daughter made it with strawberries from our bed). We're just waiting for the flames to die back to coals. They stacked things a wee bit high before lighting it.
