I made a pot of a cross between gumbo and paella. I don't like okra, so I made gumbo without them, and I didn't have seafood, so none in the paella. It's chicken, beans, stock, carrots, onions, garlic, pinto beans, cayenne, chili powder, boiled tomatoes, served reduced over rice.
I'll write up a formal recipe if anyone is interested. It tastes pretty good. I am pretty strict about things I don't like, and bell peppers and okra are two things in the "i don't like' category, but I like everything else about gumbo, so I tried mixing together two favorites. I love seafood, but I have an allergic family member so I can't use it in a general meal.

(111,245 posts)but something about green bell peppers tastes raw and unfinished to me. If I can't find or afford the ripe peppers, I just leave them out. As for okra, you can get file powder that will do the job without the bits of slime.
Still, you can't really go wrong with chicken, beans, onions, tomato, garlic and hot stuff, no matter what you call it.

(39,961 posts)Yes, and I used file powder just for that reason because that's how I view the taste and texture of okra. Can't stand it, and never could.
I REALLY don't like bell peppers of any color.

(20,043 posts)if you have a moment I'd love the recipe. I've made gumbo before, but I've seen different recipes. I don't use shellfish in anything since my husband is allergic. I usually just use chicken and sausage.

I'll do a formal write up I did use canned tomatoes and canned beans, though, so it wasn't all natural, but it didn't take all day that way.
