Does anyone else cook in bulk?

Won't you be awfully tired of chicken by the end of that week? Or do you scatter them over a longer period?

(7,699 posts)My husband has chronic kidney disease, and every bite that crosses his mouth has to be weighed, measured, or counted. So, I cook a roast for two months, weigh out the portions and freeze. Cook the potatoes that go with it, portion it, and freeze. If I didn't do this stuff, I'd go nuts using all of my measuring cups and spoons every single day. By baking all his potatoes (sliced, dipped in oil, spread with Italian Seasoning and roasted), I only have ONE pan to wash, not four. Multiply that by everything, all reduced to one pan and then just microwave. I despise dishes.
Also, he is very impulsive, and wants to just get up and go somewhere. I can usually have his dinner ready in 10 minutes or less because it's all precooked and frozen except salads.
Biggest benefit too is buying, for example, chicken breast at 1.79 a pound like it was this week, instead of 3.99 a lb later. I buy enough for 3 months, when it will go on sale again. I cook enough for 1 or 2 months.

(10,097 posts)I'm all alone, so it is just me. I like having a hot lunch so I usually make a batch of stuff to have all week. Often beans and some grain, make burritos or just heat and eat with some seasoning or salsa. With the day off today I made polenta with some beef, onions, garlic and cheese. Should be pretty good lunches this week.
