except I didn't have any marsala wine so I used 7 Daughters Moscato and I didn't have any sherry so I used more 7 daughters and I had a couple white Russians while I was making it
HOWEVER everyone says it it is good. I think I should have used a little more salt.
But I'm not minding this glass of 7 Daughters.
Oh SHIT - and now my daughter is watching Once Upon A Time and a big ass caterpillar just blew smoke at some people.;l
Yeah...this works.

(36,827 posts)It's a great dish that I make fairly often. I just use the cheaper Fine grade. I'm too cheap to use the expensive stuff. It still comes out great and has a very distinctive taste.

I love getting chicken marsala at restaurants and I think the difference in what I made and what I get when eating out was the Marsala...mine was still pretty good but I'm sure the right wine makes a difference....
I'm putting marsala on the next shopping list...

But I'm definitely gonna take Major Nikon's advice and get marsala wine for the next batch. Just texted my wife to to put it on the list.

(32,954 posts)i've made it in the past and love it. but the 'chipper' here is reluctant to share the joy of mushroom, chicken, noodley, saucy goodness cause of the wine. apple juice didn't quite work and the wine burns off isn't gonna be a choice, any other advice? apple juice and chicken broth 1::1 mix? apple juice&white grape juice&shot of rice vinegar?

I don't know how the grape juice compares to wine in reducing down. If I had unlimited chicken supplies I might be willing to try it - maybe with a shot of balsamic vinegar....

(32,954 posts)apple juice, dollop of honey, rice wine so i can tweak to taste and try it. that chowhound site also suggested deglazing the pan for lemon chicken with perrier...huh, wouldn't thought of that either. gosh i love DU. thanks for the OP original geek.
