is it any wonder why people have such a hard time losing weight?

mind you, I'm not trying to lose weight--my weight is fine

but breakfast is just something I don't take the time to cook.

So I got these weight watcher breakfast quesadillas--fast and easy.

And totally tasteless

full of sodium but in dire need of salt

fake bacon, fake cheese

they could have added some salsa for flavor

I work out in the morning and usually don't have the time to make eggs and hash browns (my fave). Most breakfast offerings are either not good or not filling IMO. I've taken to just doing a protein shake and a larger lunch.

I like eggs, real egg

and some flavor--maybe some salsa and a dab of cheese

doesn't have to be the bigest portion in the world

one egg, salsa, sprinkle of cheese

I'll have a snack at 10

My wife makes it up fresh (so can I--takes about 1 minute) from untreated oat flakes, wheat germ, milled flax seed, sunflower seeds, dried cranberries and sometimes fresh strawberries when in season (like now).

As I have serious heart issues, it helps clean out the tubes.

I fill a bowl with bran & whole wheat shredded wheat, a bit of granola with dried blueberries and strawberries, some almonds from our almond tree (tree grew from an almond planted by a scrub jay!) milk, and kefir or yogurt, and a half an apple or some other fruit.

generally, is that the manufacturers generally try to create lower-fat, lower-calorie versions of popular foods. A better approach; one taken generally by dietitians, nutritionists, and chefs; is to instead attempt to create appealing meals out of healthier ingredients.

This:

or one of these:

(All breakfasts created by dietitians. The top one is a Sri Lankan breakfast curry, the second one an avocado Eggs Benedict and the bottom a mixed-berry parfait.)

Veggie on wheat crust. It probably has the same nutritional value, if not better than the frozen meals. Maybe better. You could even reheat it if you don't like it cold.

I like the kind of breakfasts I had when I was in Germany: A slice of good, heavy, grainy bread, some cheese, some slices of tomato, maybe a little yogurt and some fruit. Yum!

toast your english muffin, cook your meat and eggs, wrap it up and stick it in the fridge. all you have to do in the morning is pop it in the microwave.

breakfast burritos are pretty easy too (I don't like eggs in burritos, but they are so fast)

keep grated cheese in the fridge and canned salsa in the cupboard! I use el pato in the green cans.

if you have a no-stick griddle or fry pan or better yet cast iron heat it up while you pile cheese on a flour tortilla, top with a second and put in pan until cheese starts to melt. turn over and finish melting. put on a papertowel and go!

burrito: scramble an egg and dump on a tortilla that you heated in the pan first or over flame if you have gas, put some cheese on top. (you can add precooked meat, or leftover chunked cooked potato too, or heat with the egg) roll up and go!

here is one we like a lot: fry some potato chunks, chopped up bacon, onion and roasted green chilis - roll that pile up in some tortillas

ok that last one made me really hungry...

Have you noticed how LARGE food portions have gotten? (I'm sure you have)

The other day at a bakery, cinnamon rolls the size of 45 rpm records were being sold. One portion??!!

It's crazy

1/4-1/3 cup of old fashioned oatmeal, splash of soymilk, a couple tbsp of either walnuts or almonds, a couple handfuls of berries, water. Toss it in the microwave for 2-5 minutes (depending on whether fresh berries added after or frozen berries that need thawing). It sits and does its thing while I'm feeding the animals. Then I either re-heat it in the winter or eat it lukewarm or room temp summer.

It takes zero thought, I alternate between blueberries, strawberries and raspberries. Occasionally will have it with bananas. Its pretty filling, tastes like berries, and healthy.

Occasionally I have something special, like when I celebrated the winter solstice with buckwheat blintzes...

One real egg and 1/2 cup of cage-free egg whites whisked together, then nuked for a minute and 1/2. Throw on salsa and a couple avocado slices and you got all 3 nutritional building blocks. Beats a power bar!
