Crustless Pizza (recipe)

Got the recipe from the local paper's food section.
It sounded so weird we had to try it.
I cannot imagine how the 'non-crust' will bake up.
I'll let you know.
BTW, it's gluten free, if that matters to you.

Where's The Crust? Pizza

Crust
1 (8 oz) package of full fat cream cheese, room temperature
2 eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 cup grated parmesan cheese

Topping
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
toppings - pepperoni, ham, sausage, mushrooms, peppers
Garlic powder

Preheat oven to 350.

Lightly spay a 9×13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.

Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 8-10 minutes, until cheese is melted.

1. I'll be waiting for your report. This would be great for low carb diets, also.

The 'non-crust' is done and smells good.

3. Quite a few years back, I used to make a crust with extra firm tofu, spices, cheese, and two eggs.

I have the recipe packed up somewhere and have forgotten how I did it exactly, but the crust ended up being rather like a chewy biscuit that was just a touch tofu tasting; which meant you needed to balance the topping just right to keep it from tasting totally off. I got it from a weirdly Low Gluten/psuedo-Buddist-semi-Vegitarian recipe pamphlet a New Age Pagan friend gave me to help "balance my humors" or something like that.
I do remember it took a lot of testing to get the spice balance right for a savory dish, and I didn't use an entire block of tofu. I also had to bake the crust first, then top it and put it under a broiler to melt the cheese. It ended up being okay for a low-carb diet; you just have to remember to cook any veggies you use as a topping first.

one of my favorite aunts who used to share funny stories with her sisters at my grandparents' home.

I guess one day they had company and decided to call for a pizza.

This person didn't want this...the other person didn't want that....etc., etc.

finally, after going through the list of what couldn't go on the pizza, the guy on the other end asks, "So, do you want crust and tomato sauce?"

hahahahah

My aunts and their stories were the best.
