Santana tunes use the guiro among the percussion instruments, and I'm sure there are others, but Gimme Shelter and Do It Again are the two that feature the instrument prominently that immediately come to mind..

my ears aren't that good, I can barely separate the guiro from the maracas, but I can tell it's there.
