You can find sopapillas in the Mexican food restaurants here in Texas.

They're similar to New Orleans Café du Monde beignets BUT different.

Sopapillas are hollow inside whereas beignets are bready in the center.

Sopapillas are usually sprinkled with regular sugar and beignets with powered (confectioners) sugar.

Yum!

I haven't had sopaipillas in years. Used to have them on visits to Albuquerque, where I also found a mix to make them at home. Nowadays, I'm sure the mix can be ordered online. Yum!

8. HA HA ME TOO!!

Their good with honey in them but the tortilla factory in Albuquerque made the BEST stuffed ones back in the 60's. Don't know if they are still there but the memory is. YUMMY!!
