Have loved all I’ve tried: cauliflower, cauliflower/sweet potato mix, cauliflower medley, and cauliflower lemon and garlic mix. I’m diabetic, so the 4-5 carbs per serving are a better choice for me.

In the low-carb world, people have been making their own cauli-rice for ages. I don't like rice so I only tried it once, BUT I use it to make pizza crust, and that both hubby and I enjoy. I also make mashed 'potatoes" from cauliflower (and mocktato salad and fakearoni and cheese) .Any time you replace starches with veggies is going to be a win.
And now let me tell you about my zucchini lasagne lol! And would you believe you can replace potatoes in a stew with turnips?
It's only recently that this stuff has gone mainstream, but I've learned a lot of tricks over the years for substitutions.
